Plantain Goodness Bowl

Ingredients

Plantain x2

Kidney beans (half a can)

Avocado x1

Red pepper X2

Red onion 1/2

Seasoning Salt, Black pepper, BBQ seasoning, Oil (for frying)

Method

  1. Rinse kidney beans well. Place in a pot with fresh water and bring to a boil. Season with salt, black pepper, and BBQ seasoning. Cook until heated through and tender.

2.Peel and slice plantain lengthways into 4 .Place on a grill tray or pan.

Grill for 15 minutes, turning halfway, until golden.

Slice red pepper and red onion. Heat a little oil in a pan. Stir-fry for 5–7 minutes until softened and slightly charred.

3 Cut and slice avocado.

Plate grilled plantain with kidney beans, stir-fried peppers and onions, and fresh avocado.
