Roast Chicken with Potatoes & Veg

Ingredients

Chicken drumstick x2

Potatoes x2

Sweet potato x1

Carrots x2

Broccoli (2 handful)

Seasoning: Chicken seasoning, Salt, Black pepper, Smoked paprika,Olive oil

Method

1. Roast the Chicken

Preheat oven to 180°C (350°F).

Rub the chicken with olive oil, chicken seasoning, salt, pepper, and smoked paprika.

Place chicken in a roasting tray and roast for 1–1¼ hours, until golden and fully cooked (juices run clear).

2. Peel and cut the potato into chunks.

Boil for 5 minutes, drain well. Toss with olive oil, salt, and pepper. Roast in the oven until crispy and golden.

3. Sweet Potato

Peel and cut into chunks. Toss with olive oil, salt, and pepper. Cook in the air fryer at 180°C for 15–20 minutes, shaking halfway.

4. Wash and slice the carrot; cut broccoli into florets. Heat a little olive oil in a pan. Stir-fry carrot first for a few minutes, then add broccoli.

Cook until just tender but still bright.

Plate the roast chicken with potatoes, sweet potato, and vegetables.

Drizzle with pan juices if desired.
