Smoked Salmon with Sticky Rice & Stir-Fried Vegetables
Ingredients
Smoked salmon 100g
Sticky rice (1 cup)
Cabbage (160g)
Carrot (160g)
Mixed peppers (160g)
Method
1.Soak sticky rice in water for 10 minutes, then rinse well.
Bring fresh water to a boil. Add rice and cook for 20 minutes until tender.
Drain and keep covered to stay warm.
2.Wash and slice cabbage, carrot, and mixed peppers.
Heat a small amount of oil in a pan over medium heat.
Stir-fry vegetables for 5–7 minutes, just until softened but still slightly crunch
3.Cut smoked salmon into slices or chunks.
Plate with sticky rice and vegetables.
Serves 2
